Blend all of the spices in a small bowl to make the carnitas spices

Heat a large heavy skillet with a Tbsp of canola oil. Brown the pork in the skillet in batches, add more canola oil as needed. Do not crowd skillet and brown on all sides.

Place the wire rack in the bottom of the instant pot. Fill instant pot with the pork as you go layering in the spices, garlic, onion, and bay leaves. Pour the juices and cola over the pork. Set instant pot to 30 minutes with warm option off. Quick release.

Turn on broiler 4” from shelf. Place pork on greased pans. Crush pork chunks with fork. Spoon some of the juices from the instant pot over the meat, but not too much that it pools in the pan. Broil pork until top is crispy; about 2 minutes, stir and repeat once. Don’t burn it. Serve with tortillas, black beans, shredded cheese and sauce of your choice.
